Easy Vegan BBQ Chickpea Sandwich

I spent a week in Austin, Texas, and consumed every BBQ meal the city had to offer. So today, I’m going the opposite route. Often, I get comments and DM’s about doing a vegan recipe. Well, I finally broke down and tried one — Vegan BBQ Chickpea Sandwich.

And I must say, it came out pretty good! Maybe it will inspire you to try a #MeatlessMonday (yes, I realize it’s Wednesday but for the sake of the hashtag, just go with it!).

This simple BBQ sandwich is completely vegan down to the bread and has a decent amount of protein, thanks to the chickpeas and organic black beans. And with some vegan mayo coleslaw, it packs the perfect punch for your tastebuds to approve.

INGREDIENTS

For the Coleslaw:

1 cup of chopped red cabbage

1 cup of chopped green cabbage

1 cup of shredded carrots

1 cup of vegan mayonnaise

2 tablespoons of vinegar

1/4 teaspoon of black pepper

1/4 teaspoon of salt

For the Sandwich Filling:

1 tablespoon of chickpea

1 tablespoon of black beans

A slice of boiled potato

1/2 tablespoon of chopped white onions

1/4 vegan barbecue sauce

Chopped fresh cilantro, as desired

For the BBQ Chickpea Sandwich

Vegan bread

BBQ chickpea filling

Coleslaw

Pickles

Vegan cheese


INSTRUCTIONS

Instructions:

  1. To make the coleslaw. Add the red and green cabbage and carrots into a medium bowl and mix it a little bit with your hands. Then, add the vegan mayonnaise, vinegar, black pepper, salt and mix with a fork. Set aside.
  2. Add the chickpea, organic black beans, boiled potato, and chopped white onions into a small bowl. Mash and mix thoroughly with a fork. Add the vegan barbecue sauce, sprinkle in the fresh cilantro, and continue mixing until the ingredients have combined.
  3. Toast two (2) slices of vegan bread and lay it on a flat plate. On one toasted bread slice, spread a thick layer of the chickpea filling and another layer of the homemade coleslaw. On the second slice of bread, add a layer of pickles and another layer of vegan cheese on top. 
  4. Carefully place the bread slice with the pickles and cheese atop the one with chickpea filling and coleslaw. Slice the BBQ Chickpea Sandwich into two and serve with your favorite drink.
