INGREDIENTS

4 potatoes

4 slices of Bacon

Bunch of chives

4 slices of Cheese, quartered

Olive oil

Salt and pepper

Sour cream

INSTRUCTIONS

  1. Take a fork and use it to poke some holes around your potatoes. Set the potatoes on a plate and place them in the microwave for 5 minutes.
  2. While we wait for the potatoes, place a non-stick skillet on medium heat and cook some bacon strips. Let the bacon release and fry in its grease for 5-7 minutes. But don't let them burn. Transfer the cooked bacon to a plate lined with a paper towel to soak the excess oil. 
  3. Take the potatoes out of the microwave. Use a knife to cut each potato in half and let them cool for a while. 
  4. While the potatoes are cooling off, take your chives and chop nicely. 
  5. Once the potatoes are warm enough to handle, take them one by one and scoop out the pulp so that only the skins will remain intact — They will form potato boats. Arrange them side by side on your cutting board. 
  6. Drizzle some olive oil on the potato boats. Then season them with a drizzle of salt and pepper. 
  7. Transfer the potatoes into the air fryer basket and cook at 400 F for 10 minutes. 
  8. Once the potatoes are nicely cooked and crisped, fold at least two(2) cheddar slices into each potato oat and place it back into the air fryer for 2 minutes. 
  9. Add a spoonful of sour cream to your cheesy potato boats, sprinkle in the chopped chives, and top off with tiny bacon bits. Serve immediately with a cold refreshing drink.
